Olives are one of the main elements in our regional culinary tradition. Harvested in September, put into water for several days in order to soften their taste and later seasoned with oil, garlic, wild fennel and chili. Crushed olives are perfect to go with salami and cheese, pizza or to fill delicious sandwiches.
